Guitar Back Restoration Wheel Questions

I've recently got a guitar backed gurdy that needs a bit of maintenance to get her in playing condition. I'm new to this world and so need to educate myself about the wheel end of things as I need to replace the wheel rim and set it right.

Firstly, when setting up the bridge, what sort of pressure, if any, am I aiming for when the strings lie on the wheel? I'm kind of assuming it shouldn't be very much if I am trying to achieve the fiddle bowing effect?

Secondly I assume that the string needs to be in contact across the whole of the wheel rim and so I may need to scrape the wheel in situ in order to achieve this?

Would be very grateful if anyone has advice on this. I don't want to rush into this project but approach it with as much understanding as I can glean!
